Pumpkin cookies • 2 cups all-purpose flour • 1 tsp baking powder • 1/2 cup monk fruit sugar (or light brown sugar) • 1/2 cup pumpkin puree • 1 teaspoon ground cinnamon • 1/2 tsp pumpkin pie spice • 1/2 teaspoon salt • 1/2 cup unsalted butter • 1/3 cup heavy cream • 1 large egg • 2 tbs chia seeds (optional)

Preheat oven to 450F. Combine flour, baking powder, monk fruit sugar, salt, pumpkin pie spice, cinnamon, salt in a large bowl. Separately whisk egg, add pumpkin puree, softened butted and heavy cream. Bring all ingredients together, form soft dough. Roll out the dough on a floured surface and using pumpkin shaped cookie cutter cut cookies. Place on the baking sheet covered with parchment paper. Bake for 15 minutes.

Banana mummies 2 bananas • 2-3 tbs peanut butter • 1 flour tortilla (8”) • 2 candy eyes Cut tortilla in 1 inch strips. Cut each banana in half. Spread peanut butter evenly over the bananas. Wrap tortilla strips around bananas leaving a small space on top to place candy eyes.Press candy eyes on bananas.

Cheese monster balls Baby bell cheese • Stuffed red pepper • Green olives • Red food coloring (natural from vegetables) Carve small circles in the center of each piece of cheese. Place sliced olive to create an eye look. Draw lines around the eyes using a toothpick and red coloring.

Carrot witch fingers 10-15 baby carrots • 1 red bell pepper • 1/4 c hummus Cut nail shaped pieces from red bell pepper. Spread hummus on the edge of the carrots, top side only. Place pepper pieces on top.Alternatively, almond and plain cream cheese can be used instead of hummus/pepper combination.

Ghost grilled cheese sandwiches 2 slices whole wheat sliced bread • 3 slices yellow American cheese • 1 tbs butter Top 1 slice of bread with 2 slices of cheese, remaining bread. Using a ghost (or a skull) shaped cookie cutter cut out a ghost shape. Spread butter on each side of the breadHeat a non-stick pan over medium high heat. Grill on each side 3 minutes per side, until golden brown and the cheese is melted. Place the last piece of cheese also shaped as a ghost on top of the bread while bread is hot.

Tomato eyes 5-6 campari tomatoes • 1/2 c non-dairy cheese • Sliced black olives • 1 tsp dried basil • 1 tbs grapeseed oil Scoop out pulp from tomatoes. Fill with cheese, sprinkle with basil, add sliced black olives on top. Drizzle with oil and place in a deep baking dish. Bake at 400F for 12-15 minutes.
